The art of grilling is often debated: is it about the fancy ingredients or the masterful technique? While both are important, there's one undeniable truth: after the meat, the main ingredient is heat. Marinades, injections, and sauces are undoubtedly powerful tools in a chef's arsenal, but they are elements of flavor, not skill.
Let’s be clear: flavor is essential. It's what tantalizes our taste buds and keeps us coming back for more. But relying solely on these flavor enhancers to mask poorly cooked meat is a disservice to the dish and, frankly, to the diner.
Heat is not just a tool; it's the key to unlocking the potential of your dish. How you apply that heat will determine the texture, juiciness, and overall quality of your finished product. A perfectly cooked bison steak, for instance, will have a beautiful sear on the outside and a tender, juicy interior with a touch of medium-rare pink down the middle. BISON STEAK RECIPE
Ingredients:
- Bison Steak
- Olive Oil
- Maldon® Sea Salt
Equipment:
- Broil King® Regal™ S490
- Grill Tongs
- Cutting Board
- Chef Knife
Instructions:
- Thoroughly coat the meat with olive oil and season generously with Maldon®/flaky sea salt.
- Set the reversible grill plates with the V-shaped side up and heat the grill to 550°F/288°C with burners set to medium-high.
- Cook for 4 minutes per side or until a perfect sear is achieved and the internal temperature is 135°F (medium-rare). Note: Bison is leaner than beef and will cook quickly–it is very easy to overcook.
- Let the cooked steak rest for 5 minutes off the heat before slicing against the grain to serve.
