ELK LOIN RECIPE

Ingredients:

  • Elk Loin
  • Olive Oil
  • Maldon® Sea Salt
  • Ground Pepper

Equipment:

Instructions:

  1. Season the meat generously with salt and pepper.
  2. Heat grill to 430°F/221°C with Hickory or Mesquite pellets.
  3. Cook for 4-5 minutes per side or until a perfect sear is achieved and the internal temperature is 130°F (medium-rare). Note: Elk is very lean compared to beef and will cook quickly—it is easy to overcook.
  4. Let the cooked steak rest for 5 minutes off the heat before slicing against the grain to serve.
